Creamy One-Pot Beef and Potato Casserole is the ultimate comfort food loaded with ground beef, tender potatoes, cheese, and a rich creamy sauce all made in one pot.
Ingredients
1 lb Ground Beef
3 large Potatoes, diced
1 small Onion, chopped
2 cloves Garlic, minced
1 cup Shredded Cheddar Cheese
1 cup Milk or Cream
1 cup Beef Broth
1 tbsp Flour or Cornstarch
1 tsp Salt
1/2 tsp Black Pepper
1/2 tsp Paprika
1/2 tsp Dried Thyme
Instructions
1. In a large pot, brown the ground beef over medium heat.
2. Add chopped onion and garlic. Sauté until softened and fragrant.
3. Stir in diced potatoes, salt, pepper, paprika, and thyme.
4. Pour in the milk and beef broth. Stir to combine.
5. Bring to a boil, then reduce heat, cover, and simmer for 15–20 minutes until potatoes are fork-tender.
6. In a small bowl, mix flour or cornstarch with cold water. Stir into the pot and cook until thickened.
7. Turn off the heat. Stir in shredded cheese until fully melted and creamy.
8. Serve hot and enjoy!
Notes
You can substitute ground beef with ground turkey or lentils for a lighter or vegetarian version.

Store leftovers in an airtight container in the fridge for up to 4 days.
To freeze, use a freezer-safe container for up to 2 months. Thaw overnight before reheating.
